Chitosan is a soluble dietary fiber produced by deacetylating chitin, the structural polymer of crustacean (shrimp and crab) shells.
Its positively charged amino groups are proposed to bind negatively charged dietary fats and bile acids in the gut, increasing their fecal excretion — the basis for its marketing as a natural 'fat binder' for weight loss and cholesterol control.
The evidence tells a more sober story: the Cochrane review and better-designed trials find only a small, statistically detectable weight loss that is unlikely to be clinically meaningful, with the effect shrinking sharply as trial quality improves. Cholesterol effects are modest and inconsistent across lipid fractions.
Chitosan is best viewed as an overhyped adjunct, not a stand-alone solution.

The commonly studied dose of Chitosan is 1g three times daily with meals (3g total). Research points to an estimated optimal dose around 2.5g, with a minimum effective dose near 2g. Individual response varies — start low and adjust.
The best time to take Chitosan is with meals. Take it with food. Chitosan is proposed to work by binding dietary fat in the gut, so it is taken with or just before fat-containing meals so it is present when fat is consumed.
Chitosan is generally safe at recommended doses, with a few precautions worth noting. The most commonly reported side effects are constipation, bloating, flatulence, nausea, allergic reaction in shellfish-allergic individuals.
